Yummy Super Coffee Recipe!

Today baby Ant and I had a bit of a late start (due to him waking up every 1-2 hours last night), so I decided to kick start my day with a tasty treat! My super coffee came out so amazing that I had to share it 🙂

All you need is a blender, hot coffee, almond milk, virgin coconut oil, and agave nectar.

The coffee I use is decaff. I don’t want baby Ant to be gassy! But of course, use whatever coffee you’d like.

I like almond milk in my coffee. It is a good alternative to dairy milk (both the baby and I are allergic) and is very healthy. I prefer Silk’s unsweetened, plain almond milk. The sweetened and vanilla flavor kinds are sickly sweet to me- blah! I also like Silk brand because all of their products are Non-GMO Project verified!

I use organic coconut oil for all sorts of things around the house- to clean Ant’s mouth (for preventing thrush), for cooking, as a hair mask, and as a skin moisturizer. Virgin coconut oil has a light coconut scent and taste (refined coconut oil does not). Coconut oil also has anti-bacterial and anti-fungal properties, so it is considered a super food!

Organic agave nectar is a great alternative to refined sugar. It is about 4 times sweeter than refined sugar, so you can use less! As is true with all sugary foods- its should be used in moderation. But it is tasty and much healthier than eating something that has been bleached. Agave nectar also has a low glycemic index, so it is often the choice sweetener of diabetics. I like raw agave nectar because it is slightly less sweet than light agave nectar.

Instructions:

For this recipe, I brewed four cups (the measurement on the pot) of decaff coffee.

*Add four brewed cups of hot coffee to the blender

*Add enough almond milk to make your coffee the desired color. You could also use organic dairy milk or any nut milk. Milk kefir would make this beverage even more super!

*Add four tablespoons of coconut oil.

*Add two tablespoons of agave nectar (try a bit of the blended mixture and add more agave nectar for additional sweetness). Raw honey would make this beverage especially super!

*Blend it all up on the lowest setting for about 30 seconds, or until there is no separation.
